Healthy caribbean Mahi-Mahi with green curry and fresh lemon grass
For this amazing recipe I took one of the best local fish we can have here in St-barth’s, the mahi-mahi. It is a white fish full of flavor that is caught in the local sea and brought to you straight from the fishermen. Cut in filet on the spot it will take the fisherman only 5 minutes while you may struggle way more than that if you want to do it by yourself.
2 Fresh mahi-mahi
2 Lemon grass
1 tablespoon green curry paste
1 can of coconut milk
1 small onion
Some baby corn
Poached the Mahi in salted boiling water for 5 minutes with some grey pepper once cooked keep them aside for a few minutes.
In a large pan start cooking the onion with some butter. Add the coconut milk and bring everything slowly to boiling point.
Crushed gently the lemon grass and add them to the coconut milk reduce fire and let infuse for 10 minutes.
Use this time to cook the brocoli
Add the green curry paste and stir until you are having a nice sauce.
Add the baby corn and finished by adding the Mahi.
Dinner is ready. Serve this with any rice you want. I used basmati rice.
